In 2024, Togyushi partnered with Zao Farm in Yamagata, Japan, to bring their award-winning G1 Zao Wagyu to the United States—its first time ever leaving Japan.
What began as a small family farm in Yamagata’s mountain highlands has grown into one of the country’s most respected Wagyu programs. The G1 designation marks the highest purity of lineage and the strictest standards of care, ensuring cattle are raised with precision in environment, feed, and tradition.
At Togyushi, we chose to work exclusively with female Wagyu, prized for their finer marbling, tenderness, and depth of flavor. This commitment allows us to share the most delicate and nuanced expression of Wagyu with our guests.
This partnership profoundly shapes our menus. Working closely with Zao’s farmers, our chefs honor their breeding and care cycles, shaping omakase courses that follow the natural rhythms of the farm. Raised to the highest standards and honored with Japan’s Emperor’s Cup, Zao Wagyu is offered exclusively at Togyushi—delivering a flavor and texture found nowhere else in the world.
