Togyushi’s story began with curiosity: to share a deeper understanding of Wagyu’s heritage from Japan with the world. True to our name meaning “bull fighter”, we believe in the infinite potential of Wagyu and its power to inspire.
Togyushi is a contemporary Japanese restaurant with a progressive spirit, blending tradition with modern creativity to redefine the Wagyu experience in New York City. Guided by the “Five Tastes + One” philosophy, our Chef’s Counter Omakase showcases rare expressions of Wagyu through Japanese techniques like warayaki straw-searing and binchotan charcoal grilling.
Helmed by Owner and Executive Chef Yamasaki—one of only a handful of certified Wagyu Masters in the world—Togyushi embodies a shared passion to showcase Japanese Wagyu in America at its very best. We partnered exclusively with Zao Farm in Yamagata, Japan, to introduce their award-winning G1 Zao Wagyu to the United States for the first time. We choose to work solely with female Wagyu, celebrated for their finer marbling, tenderness, and depth of flavor.
Guests can explore this heritage through two experiences: the immersive Chef’s Counter Omakase and the lively Wagyu Bistro Bar, where shareable plates meet crafted cocktails. At Togyushi, every detail is a bridge between farm and city, tradition and innovation, Japan and New York.
