WHAT IS ZAO WAGYU?
Zao Wagyu is a premium Japanese wagyu beef, raised in the Zao region of Yamagata Prefecture. It is considered one of the top three wagyu varieties, alongside Kobe and Ōmi beef.
WHAT MAKES ZAO WAGYU SPECIAL COMPARED TO OTHER WAGYU?
Zao Wagyu comes from the Zao region of Japan, where cattle are raised in pristine natural conditions. The beef is known for its fine marbling, buttery texture, and balanced flavor, less heavy than some wagyu varieties, but incredibly rich and elegant.

Exclusively at Togyushi, marking the first time Zao Wagyu has ever been served outside Japan.
HOW DO I MAKE A RESERVATION?
We release reservations 14 days in advance on RESY for our Chef’s Counter Omakase and the Main Dining Room. Reservations are available for 1–6 guests. The Lounge welcomes walk-ins only, offering bar seating on a first-come.
WHAT IS YOUR CANCELLATION POLICY?
Reservations canceled less than 48 hours prior to the reserved time will be charged a $50 per guest cancellation fee.
WHAT MENU IS OFFERED AT THE CHEF’S COUNTER, MAIN DINING ROOM, AND LOUNGE?
Chef’s Counter – Exclusive Omakase: A full 10-course tasting with Chef Yamasaki, $195.
Main Dining Room – Select Omakase: A lighter 6-course journey highlighting Zao Wagyu, $95.
The Lounge: Offers a Wagyu Bistro à la carte menu. Perfect for cocktails, small plates, or a first taste of Wagyu.
WHAT IS THE LARGEST PARTY YOU CAN ACCOMMODATE?

DO YOU OFFER PRIVATE EVENTS?
Yes, Togyushi is available for private events and full buyouts. We can host up to 80 guests for a standing cocktail reception or 60 guests for a seated dinner. For inquiries, contact info@togyushi.com.
ARE CHILDREN WELCOME?
Yes, children are welcome. Please note we do not provide a children’s menu. For more flexibility, we recommend reserving the Lounge, where à la carte options are available.
IS THERE A DRESS CODE?
We do not require formal attire, but we encourage smart casual dress to complement our refined yet relaxed dining experience.
WHAT IS THE CORKAGE FEE?
$75 per 750mL bottle, with a maximum of 2 bottles or 1 magnum per party. We kindly ask that bottles already featured on our list not be brought in. Corkage applies to wine only—we do not allow liquor, sake, or soju.
CAN I BRING MY OWN CAKE?
Yes, we apply a $10 per-person cake plating fee.
DO YOU ACCOMMODATE DIETARY RESTRICTIONS?
We do our best to accommodate dietary restrictions. Please inform us of any restrictions when booking. Since wagyu is central to the menu, substitutions may be limited, but we will do our best to accommodate.
